Two rows need a word of explanation. At 325°F the exact figure, 162.8°C, sits halfway between two round numbers, so British charts disagree on 160°C or 170°C. At 475°F the gas mark 9 convention of 240°C is a touch below the exact 246.1°C. In both cases, either setting will work; just keep an eye on colour near the end of cooking.
Why does “double it and add 30” not work for ovens?
The shortcut is close for weather but drifts badly at oven heat. It doubles instead of multiplying by 1.8, so the error grows by 0.2°F for every degree Celsius. At 20°C it gives 70°F against a true 68°F, which is fine for deciding on a coat. At 180°C it gives 390°F against a true 356°F, a 34°F overshoot that would brown a sponge long before the centre set.
For quick mental conversions in the kitchen, it is easier to memorise four anchor points and work from them: 150°C ≈ 300°F, 180°C ≈ 350°F, 200°C ≈ 400°F and 220°C ≈ 425°F.
Do Fahrenheit recipes assume a fan oven?
